Our oven moulds made of steel are the perfect allies for a quick and uniform cooking process in the oven for sweet and savory dishes, with a large choice of product lines adapted to all needs and occasions.

They are made of Hi-Top steel, a specific type of steel made for the cooking process in the oven for sweet and savory dishes.
Thanks to its thermal conductivity features and low thickness, this type of steel guarantees, better than any other material, quick and uniform baking in the oven.

To these high performances due to the quality of steel and to the low thickness, we can add those connected to the non-stick coating which guarantees an easy demoulding of the cake and a full cleaning of the oven mould after use.

Thanks to the non-stick coatings we can reduce the use of oil and fat, basic rules to cook healthy and in the proper way.

What shall I do before cooking?

  • Clean the mould, especially if it is the first time you use it.
  • Grease it with some butter or some margarine or with a drizzle of oil.
  • Put it back in the fridge for a few minutes (this will enable the greasy layer to solidify. This little trick will help it to not stick too quickly to the mixture).
  • Pre-heat the oven for at least 10 minutes (except in case you are using the convection oven).

And during the cooking?

  • Put your mould on the grill, never at the bottom of the oven or on a hot-plate.
  • Be sure it is in the center: the low cookies are to be placed on the intermediate grill, the high cakes in the lower part of the oven.
  • Do not open your oven during the first 20 minutes of the cooking.
  • If it has a pale-yellow color on top, cover the dessert with an aluminum wrap.
  • To check the cooking, use a toothpick at the top of the cake.
  • If you do not see humid crumbles or some mixture remaining, the dessert is ready to be taken out of the oven.

After cooking?

  • Let the dessert cool down in the mould for approximately 3 minutes (in case of sponge cake, demould it immediately).
  • Demould the cake and put in on a grill for cakes.
  • Clean the mould as soon as possible to clear the remaining more easily.
  • You can use the washing machine, but it is always better to hand-clean the moulds with hot water, soap and a washcloth.
  • Do not use sharp objects or too coarse as steel wool or rough abrasive products.
  • Dry immediately the mould after you have cleaned it.

Our steel is ECCS.
The substrate Electrolytic Chromium Coated Steel is a type of steel plated with chrome which is specially produced by a few steel plants and which is especially used in the bakeware compound.
Time and wear resistant.
The steel moulds perfectly stick to the coatings, keeping clear of corrosion and the decay due to wear in time.
Elasticity is fundamental.

The steel used for the production of Guardini oven moulds is a very elastic material, fundamental feature for moulding the moulds during production. This guarantees high performance of the mould in baking.

Different thicknesses.
A fundamental feature for the cooking in the oven is the thickness of the substrate which can be produced in different thicknesses, even very thin, making it more compliant to the cooking process.
An incredible performance.
The non-stick steel mould guarantees enduring high performances, without deteriorating with a normal domestic use.
A safe coating.

The non-stick coating contains PTFE (polytetrafluoroethylene), which was discovered more than 80 years ago, in 1938, and has been used as a non-stick coating for cookware since the 1950s. This fluoropolymer has unique properties, being non-stick to water and oil, thermally stable and resistant to chemicals. Due to these properties, PTFE is used in many important medical and industrial applications, e.g. in surgery or in the food industry.

PTFE is safe and is applied to baking moulds with "coil coating" technology.

It is able to give the pan excellent non-stick performance in the long term, ensuring a longer life cycle to the baking moulds.

It is free of noxious substances.

PTFE is a non-toxic material whose particles are harmless, inert and are not absorbed by the body or food. Its properties have made it the subject of study by many experts, such as, among others, Franco Battaglia, Professor of Environmental Chemistry at the University of Modena, and Gianni Fochi, Professor of Chemistry at the Scuola Superiore Normale di Pisa, which assessed the health and environmental safety of non-stick coatings.

Airc and the American Cancer Society have also commented on this.

The production of technologies such as non-stick cookware and baking moulds is largely regulated at European and National level by a dense regulatory and legislative apparatus, strictly applied by industry professionals and verified by competent authorities. In addition, the industry evolved with new scientific developments over the years with new scientific evidence, proposing products that are completely healthy.

Non-stick coatings and PFAS.

The per-and polyfloroalkyl substances, better known by the acronym PFAS, contains thousands of chemical compounds that, due to their particular physical and chemical properties, are used in the production in many sectors, from transport to medical equipment, from clothing to coatings used for cooking food, to give water-repellent and oil-repellent properties.

PFAS are usually automatically associated with health and environment concerns, but not always relevant to the context.

The large definition of PFAS can be confusing: according to the OECD (The Organisation for Economic Co-operation and Development), "PFAS is any substance that contains at least one carbon of methyl (CF3-) or methylene (-CF2-) completely fluorinated (without any H/Cl/Br/I attached to it)".

More than 10.000 substances fall within such a broad definition: a variety of chemical compounds that have extremely varied properties. The reason why such a heterogeneous set of substances is grouped and identified as PFAS is due to the common characteristics of persistence, which, however, is not always a risk.

A particular type of PFAS are fluoropolymers such as PTFE, substances used in high-tech applications including, since the 1950s, non-stick coatings of pots and pans. Research on the safety of fluoropolymers to date has consistently found that they, unlike other PFAS, present no risk to human health when used in articles in contact with food and water.

Guardini baking moulds have always been subjected to chemical analysis to ascertain their suitability for food contact and product safety.

They are Bisphenol A free.

Bisphenol A (BPA) has been banned from production and is replaced in our moulds by a BPA FREE coating. This replacement element has significantly improved the quality of the non-stick coatings, as it creates a barrier between the substrate of the baking mould and the coating, which improves its food contact performance. The non-stick properties are better and more performing.

Healthy cooking.

Thanks to the non-stick coating  of the moulds, it is allowed to cook with less fat, for the benefit of health, just grease and lightly oil the molds to have excellent non-stick results.

Easy demoulding.
